4th of July Entertaining Ideas : Strawberry Pie

GAUMY & MIMI’S STRAWBERRY PIE

Strawberry Pie is one of my FAVORITE summer indulgences! I recently received this amazing recipe from my Aunt Ann, who is currently fighting breast cancer. I wanted to share this with you in honor of her and I would love to hear what you think about this recipe. This is a recipe from great grandmother, Gaumy, and my grandmother, Mimi. We searched for some fabulous 4th of July-inspired tablescape as well as “what am I going to wear” outfit suggestions. XO

1 baked pie crust (I make a graham cracker crust)

Cream layer:

½ cup powdered sugar

1 tsp. Vanilla

3 oz. cream cheese

1 cup whipping cream, whipped

Glazed Filling:

1 qt. Fresh strawberries

Sugar

1 Tbs. cornstarch

1 tsp. Lemon juice

Red food color (optional)

1 Tbs. butter

  1. Beat cream cheese, powdered sugar, and vanilla until smooth and fluffy. Fold in whipped cream. Spread evenly over baked and cooled pie crust. Chill thoroughly.
  2. Slice and sweeten berries to your taste. (she uses about ¼ cup) Let stand, then drain thoroughly, saving liquid. Combine lemon juice and strawberry liquid and add enough water to make 1 cup. In a small saucepan, blend a small amount of liquid with cornstarch. Gradually add remaining liquid. Cook over medium heat for 3-5 minutes or until thick and clear. Remove from heat and add butter and 2-3 drops of food coloring if you like. Cool. Arrange drained berries over the chilled cream layer. Spoon glaze over berries. Chill until served.
